I recently made Candied Baby Carrots. I thought I would share since I had so many people ask about them. This is great and easy veggie dish to make for a large group of people for the Holidays.

Candied Baby Carrots

INGREDIENTS:

  • 4 lbs of baby carrots
  • 4 c. water
  • 1 stick of butter
  • 3/4 c. packed brown sugar
  • salt and pepper to taste

DIRECTIONS:

Bring water to boil in large and pot add carrots, reduce heat to medium and cook for about 15-20 minutes until tender when poked with a fork, in a small sauce pan melt butter and add the brown sugar, cook on medium- low heat until syrup like. Drain excess water from pot of carrots and then pour your brown sugar and butter mixture toss add salt and pepper and serve.

This will feed quite a bit of people and can be made the night before.
