These are easy to make and can be made with many different toppings. They are pretty much mess free and the perfect size for little ones to hold.
- 8 large eggs
- 1/4 c. milk
- any toppings you would like, chopped (I used spinach, green onions, tomatoes)
- cooking spray
- salt and pepper
- cheese , optional
Pre-heat oven to 375○, in a mixing bowl add milk, eggs, salt and pepper, whisk together then ladle into greased muffin pan, evenly add all of your toppings (fresh or cooked in a saute pan first) , place in oven and cook for 14-18 minutes, if adding cheese sprinkle over the top of the egg muffins about 8 minutes before cooking time is over.
These can actually be quite fun for kids to help make and are great for when your kids have sleepovers or would even be good for a morning brunch with family, each person can choose the veggies (meat,beans) they want and everything can cook at once.
